Beschreibung

Top-class chef's knife from the Shojin series – designed in Denmark in collaboration with a Japanese designer. The 67-layer Damascus blade with VG-10 core (~62 HRC) ensures long-lasting sharpness and high precision. The handle is made of FSC-certified pakka wood with a dark, ebony-like finish and a balanced metal end cap for stability and weight.

Cleaning and care

1. Wipe the knife during use to remove food debris - rinse immediately after use in lukewarm water with mild soap.
2. Never use the dishwasher - this will damage both the blade and the handle. Dry thoroughly with a clean dish towel.
3. Always use wooden or plastic cutting boards - avoid stone, glass, and steel, which will quickly dull the blade.
4. Avoid hard foods such as frozen foods, hard bread crusts, and bones - the knife is designed for precise, gentle cuts.
5. Sharpen the blade regularly with a ceramic or diamond-coated honing steel - and use a whetstone for sharpening as needed.
6. Store the knife properly: on a magnetic strip, in a holder, or a sheath - never loose in a drawer.
